Peach Crisp

Ingredients 

Filling: 

  • 5 cups peaches, cut into one inch pieces
  • ½ cup sugar
  • 2 Tbsp all-purpose flour
  • 1 tsp lemon zest
  • 2 Tbsp lemon juice

Topping:  

  • 1 cup quick cooking oats
  • 1 cup brown sugar, packed
  • ½ cup all purpose flour
  • 1 tsp ground nutmeg
  • 1 tsp ground ginger
  • ½ tsp ground cinnamon
  • ½ cup cold butter, cut into small pieces, plus more butter to grease the baking dish

Optional: 

  • vanilla ice cream  

Instructions

  • Preheat oven to 350 degrees.
  • Combine all the ingredients for the filling and set aside.
  • Combine all the ingredients for the topping and set aside.
  • Depending on how you want to serve this, you can either use a medium casserole dish 10”x 8” (greased with butter) or large ramekins for individual servings.
  • Place filling into greased serving dish. Then place a generous amount of topping mix over the peach mix.
  • Bake in the oven for 1 hour and 30 minutes if using a baking dish. If using individual ramekins and depending on the size of your ramekin, perhaps around 45 minutes. Bake until white powder on topping is no longer visible.
  • Serve by itself or with a scoop of ice cream on top!
