Banh Mi Hap with Thit

Ingredients 

Marinade:

  • 1 lb ground beef
  • ½ tsp black pepper
  • pinch of sugar

Ingredients:

  • ¼ cup avocado oil, or any neutral cooking oil
  • ½ whole onion, chopped
  • 2 garlic cloves, chopped
  • ½ cup carrots, cut into ¼ inch squares
  • ½ cup jicama, cut into ¼ inch squares
  • 2 Tbsp mushroom powder
  • ½ tsp fish sauce
  • ¼ cup chives, chopped
  • 1 whole French baguette or 4 Banh Mi, cut into an inch thick slices

Fried shallots:

  • ¼ cup shallots, sliced
  • ½ cup avocado oil, or any neutral oil

Scallion oil:

  • 4 green onions, chopped
  • oil from frying shallots

Serve with:

  • red leaf lettuce 
  • herbs such as basil, mint leaves, cilantro, perilla leaves, etc. 
  • cucumber, sliced
  • peanuts (optional), chopped
  • fish dipping sauce  

Instructions

  • Add the marinade ingredients together and set aside.
  • In a large skillet on medium high heat, add cooking oil. Then add onions and garlic and sauté for one minute.
  • Add marinated beef and cook it for 3 minutes untouched. Then with a spatula break up the beef into smaller pieces.
  • Add carrots and jicama along with mushroom powder and fish sauce.
  • Stir fry everything together until the beef is no longer pink, around 4 minutes. Once beef is cooked, turn off heat and then add chopped chives and mix thoroughly. Set aside.
  • Steam sliced bread by adding them to a piping hot steamer and steam for 5 minutes.
  • To make the fried shallots, in a small saucepan, add oil and fry shallots until light brown, then remove from oil.  
  • Put green onions in a heat resistant like Pyrex measuring glass and pour the hot oil left from frying the shallots.    
  • Place steamed bread on a serving platter and arrange in one layer. Add a heaping spoonful of cooked beef mix onto each slice of steamed bread, then top with a sprinkle of fried shallots and a dollop of scallion oil.  
  • Optional to sprinkle crushed peanuts on top. Add to lettuce wrap along with your choice of herbs and dip it in fish dipping sauce. Another option is to put it in rice paper and roll it up and dip with fish dipping sauce.
