Harissa Prawns

Ingredients 

Marinade:

  • 3 lbs whole prawns with head on
  • 10 oz jar harissa paste
  • 3 Tbsp olive oil
  • 1 Tbsp garlic salt
  • cup sumac
  • 1 tsp ground coriander
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp cayenne pepper

Ingredients:

  • 2 Tbsp avocado oil, or any neutral cooking oil
  • 8 Tbsp unsalted butter
  • 8 cloves garlic , chopped
  • 1 large shallot, chopped
  • 1 whole lemon, juiced

Optional garnish:

  • cucumber tzatziki
  • lime juice

Instructions

  • Marinate prawns with all the marinade ingredients. Set aside.
  • In a large skillet, on medium high heat, add 1 Tbsp cooking oil and 2 Tbsp butter along with garlic and shallots. Cook for 30 seconds.
  • Add half of marinated prawns and cook for 5 minutes, turning them over halfway.
  • Add half lemon juice and 2 Tbsp of butter. Cook for another couple minutes until shrimp is cooked. Remove shrimp from pan and repeat then process. You will do this in two batches total.
  • I love adding a big dollop of cucumber tzatziki and squeezing lime on shrimp.
  • Serve immediately.
