Stir Fried Chow Mein | Mì Xào Mềm
Stir Fried Chow Mein, or Mì Xào Mềm, is a flavorful dish featuring tender egg noodles stir-fried with a mix of vegetables in a rich, savory sauce. It's a delightful and satisfying meal that's quick and easy to enjoy.
Ingredients
Ingredients:
- 2 packages egg noodles, 15 oz
- ¼ cup sesame oil, plus ¼ cup
- ½ onion, sliced
- 2 Tbsp garlic, finely chopped
- 1 cup carrots, julienned
- 1 cup celery, julienned, one inch length
- 1 cup cabbage, julienned
- 4 cups broccoli, chopped into bite size pieces
- ½ cup garlic chives or green onions, cut in one inch length
- 2 cups bean sprouts
Sauce:
- ¼ cup Maggi, or low sodium soy sauce
- 2 tsp oyster sauce
- 1 Tbsp dark soy sauce
- 2 Tbsp fish sauce
- ½ tsp sugar
- 2 Tbsp mushroom powder
Garnish:
- cilantro sprigs
Instructions
- Remove noodles from the package and unravel them.
- In a piping hot steamer, add noodles and steam for 3 minutes.
- In a medium bowl, add water and ice to create an ice water bath. Set aside.
- In a pot, add water and 2 Tbsp sesame oil and bring to a boil. Once water is boiling, add egg noodles a handful at a time and cook for 10 seconds while stirring. Scoop noodles out with a spider strainer, or any kind of strainer, and dump noodles into the ice water bath. Repeat the process.
- Once all noodles are cooked, drain water. Add ¼ cup sesame oil to noodles and set aside in a strainer to let them dry.
- In a wok over medium high heat, add ¼ cup sesame oil, then add onions, garlic and broccoli and stir fry for a few minutes. Add carrots, celery, cabbage and the sauce mix. Stir fry for a couple more minutes, then add garlic chives and bean sprouts. Toss so everything is thoroughly mixed.
- Add egg noodles toss and mix thoroughly and fry for 5 minutes.
- Toss constantly so they don’t clump together.
- Garnish with cilantro sprigs and serve!!

I think you mean vegetable instead of sesame oil? That much sesame oil would make this dish inedible.

no i meant to say sesame oil. =) the first 1/4 cup is to mix it in the noodles after cooking the noodles and the other 1/4 cup is to cook with it. it actually tastes great and is quite edible. you should try it! xo.

I love how this recipe turned out!! I happened to have the ingredients for the recipe in my fridge and made mi xao mem for dinner. Very easy to make on a weeknight and you can make this extra healthy by adding more veggies, too. I added haricot vert and it was delicious. Will definitely make this again!
