Creamy Avocado Salsa Verde
Ingredients
- ½ lb tomatillos, around 2 cups
- 2 serrano peppers
- 1 jalapenos, make sure they are green and not red jalapeños
- ¼ onion
- 1 garlic clove
- ¼ cup cilantro
- 1 whole avocado
- 1 tsp kosher salt
- pinch black pepper
- ½ lime, juiced and zest from half the lime
- ½ cup water from boiling the tomatillos
Instructions
- In a pot, add the tomatillos and peppers and then cover with water. Bring to a boil then boil for 3 minutes.
- Reserve ½ cup of water from the pot and set aside
- Drain, then add tomatillos and peppers (stems removed) to a blender, or food processor, along with the remaining ingredients. Blend for a couple minutes until it’s a puree.
