BBQ Pork Spare Ribs
Ingredients
Marinade/Rub:
- 5 lb pork spareribs, or baby back ribs, whole slab and not cut into separate ribs, equivalent to 2 racks
- ½ cup yellow mustard
- 2 Tbsp garlic salt
- 2 Tbsp onion powder
- 2 Tbsp sugar
- 1 Tbsp black pepper
- 2 Tbsp paprika
- 1 tsp dried oregano
- 2 Tbsp olive oil
Aromatics for roasting:
- 1 onion, sliced
- 4 garlic cloves, smashed
- 2 thyme sprigs
- ¼ cup apple cider , or apple juice
BBQ sauce:
- pan juice from ribs
- ¼ cup brown sugar
- 2 Tbsp white vinegar
- 3 Tbsp Worcestershire sauce
- 1 cup ketchup
- 2 thyme sprigs
Instructions
- Preheat oven to 275 degrees.
- Pat spareribs dry with paper towel.
- If your ribs still have the membrane on the back, remove it before marinating — some butchers remove this for you, so check first.
- Mix all marinade ingredients together and lather on the spareribs.
- Place aluminum foil on the roasting pan, then add aromatic ingredients, place spareribs over them and cover entirely with aluminum foil. Slow bake spareribs for 4 hours.
- Remove spareribs from the oven and save the pan juice. Discard the aluminum foil.
- Increase oven temperature to 400 degrees.
- Strain pan juice into a small saucepan and remove and discard as much of the oil sitting on top as possible. Then add BBQ sauce ingredients to the saucepan. Bring it to a boil, then reduce the heat to low and let it simmer for 30 minutes.
- Place ribs back on the roasting pan.
- Place pan back in the oven and bake for another 25 minutes.
- Pull the BBQ ribs out and brush on cooked BBQ sauce. Place back in oven and bake for 5 additional minutes.
- Keep some BBQ sauce on the side to dip BBQ ribs with.
