Korean BBQ Shortribs | Kalbi
Kalbi refers to Korean grilled short ribs, marinated in a sweet and savory sauce made with soy sauce, garlic, sugar, Asian pear and a hint of kiwi. It's super delicious and definitely a crowd pleaser!
Ingredients
Marinade:
- 5 lbs short beef ribs, flanken
- 1 cup brown sugar, packed
- 1 cup low sodium soy sauce
- ½ cup coconut water
- ¼ cup mirin
- 1 onion, peeled, finely grated
- 1 Asian pear, peeled, finely grated
- ¼ cup minced garlic
- 2 Tbsp sesame oil
- ¼ tsp black pepper
- 2 green onions, thinly sliced, white (for marinade) and green parts (for garnish), separated
- 1 Tbsp ginger, finely grated
- 2 kiwis, peeled, finely grated
- 2 Tbsp olive oil
Garnish:
- green onions
- sesame seeds
Instructions
- Mix all the marinade ingredients together and then rub marinade into the short ribs.
- Massage together and store in either a bowl or Ziploc bag.
- Put in refrigerator to marinate overnight.
- Remove marinated beef and let it sit at room temperature for at least one hour before you start to grill.
- You’ll know when the kalbi is done, because the bones will pull away cleanly from the meat with just a little bit of resistance.
- Sprinkle with sesame seeds and green onions to garnish.
- Wrap it with red leaf lettuce and perilla, or serve it with white rice and salad.
Notes
It’s much better and preferred that the meat marinates overnight, otherwise it won’t have time to tenderize and absorb the flavors.
