Creamy Avocado Salsa Verde

Ingredients 

  • 1 lb tomatillos, around 4 cups
  • 4 serrano peppers
  • 2 jalapenos, make sure they are green and not red jalapeños
  • ¼ onion
  • 2 garlic cloves
  • ¼ cup cilantro
  • 1 whole avocado 
  • 2 tsp kosher salt
  • pinch black pepper
  • 1 whole lime zest, from half a lime
  • 1 cup water from boiling the tomatillos

Instructions

  • In a pot, add the tomatillos and peppers and then cover with water.  Bring to a boil then boil for 3 minutes.  
  • Reserve 1 cup of water from the pot and set aside
  • Drain, then add tomatillos and peppers (stems removed) to a blender, or food processor, along with the remaining ingredients.  Blend for a couple minutes until it’s a puree.
