Sauteed Bell Peppers

Ingredients 

  • 2 Tbsp avocado oil, or any neutral cooking oil
  • 1 whole onion, sliced
  • 2 cloves garlic, chopped
  • 2 cups red bell peppers, cut into ¼ inch strips
  • 2 cups yellow bell peppers, cut into ¼ inch strips
  • 1 cup green bell pepper, cut into ¼ inch strips
  • ½ tsp black pepper
  • 1 tsp kosher salt

Instructions

  • Heat oil in a large skillet on medium heat. Add onions and garlic and saute until aromatic, for a minute.
  • Add bell peppers then salt and black pepper. Reduce heat to low and cook for 30 minutes, tossing halfway.
  • Serve with your favorite taco recipe or add to hot dog, etc.
