Soy Dipping Sauce

Servings: 6 cups

Ingredients 

  • 1 tbsp avocado oil , or any neutral oil
  • 6 cloves garlic, chopped
  • 1 cup water
  • 2 cups organic coconut water
  • 1 cup white vinegar
  • 1 cup low sodium soy sauce
  • 1 ¼ cup sugar
  • 2 tbsp lime juice with pulp
  • lime zest , from 1 whole lime
  • ¼ cup thai chili, chopped
  • 1 Tbsp chili paste

Instructions

  • In a small saucepan on medium heat, add oil and fry chopped garlic until they are a nice light golden brown.
  • Then pour in water, coconut water, vinegar, low sodium soy sauce and sugar. Stir together and boil until sugar dissolves.
  • Remove from heat.
  • Add lime juice, lime zest, chopped chili peppers and chili paste. 
  • Good for a month in the fridge.
